Υλικά: 💚 1 κουταλιά της σούπας λάδι καρύδας (ή ελαιόλαδο) 💚 1 λευκό κρεμμύδι, μικρά κυβάκια 💚 3 σκελίδες σκόρδο, ψιλοκομμένες 💚 1 ίντσας κομμάτι τζίντζερ, ξεφλουδισμένο και τριμμένο 400 γραμμάρια συνολικά) 💚 3/4 φλιτζάνι και 1 κουταλιά της σούπας (200 γρ.) φρέσκες ντομάτες, ψιλοκομμένες 💚 1 κονσέρβα ρεβίθια, στραγγισμένα (βάρος στραγγισμένο 240 γρ.) 💚 1/2 φλιτζάνι (60 γρ.) φυστικοβούτυρο (μαλακό ή κοκοροψημένο γάλα) αλλά και το κασσίτερο θα λειτουργήσει) 💚 1/2 φλιτζάνι (50 γρ.) φρέσκο σπανάκι, ψιλοκομμένο 💚 Αλάτι και πιπέρι Για σερβίρισμα: μαγειρεμένο ρύζι, ψωμιά naan, φρέσκο λάιμ, βότανα, σουσάμι Προετοιμασία: 1. Προσθέστε το λάδι καρύδας σε ένα μεγάλο τηγάνι και αφήστε το να λιώσει. Μόλις ζεσταθεί, προσθέστε το κρεμμύδι, το σκόρδο και το τζίντζερ και τσιγαρίστε για 5 λεπτά μέχρι να μαλακώσουν. Προσθέστε τη σκόνη κάρυ και τηγανίστε για 1 λεπτό. 2. Προσθέστε το ψιλοκομμένο κουνουπίδι και τις ντομάτες και μαγειρέψτε για 5 λεπτά να μαλακώσουν οι ντομάτες. 3. Ρίχνουμε μέσα τα ρεβίθια και το φυστικοβούτυρο και ανακατεύουμε καλά. Τώρα ρίχνουμε το γάλα καρύδας, ανακατεύουμε και αφήνουμε να βράσει. Χαμηλώνουμε τη φωτιά μέχρι να σιγοβράσει, μαγειρεύουμε για 20 λεπτά με το καπάκι μέχρι να μαλακώσει το κουνουπίδι. Αλατοπιπερώνουμε. 4. Ρίξτε τώρα το σπανάκι και αφήστε το να μαραθεί και σερβίρετε με ρύζι, φρέσκα μυρωδικά, σουσάμι και φέτες λάιμ. Μόλις κρυώσουν, φυλάξτε τα υπολείμματα σε αεροστεγές δοχείο στο ψυγείο για 2-3 ημέρες ή στην κατάψυξη για 1 μήνα.
